Born in Buenos Aires, Argentina, and raised in France, Sebastian is known for his unique fusion of French gastronomy and Latin American recipes. His culinary journey began in France where he developed a deep appreciation for the art of cooking.

As a Maître Restaurateur and member of the prestigious Collège Culinaire de France, Sebastian has made a name for himself with his seasonal approach to food. His talent and creativity led him to win the Risotto Mania contest as well as create the AupsDog trademark, a testament to his innovative spirit.

Sebastian expanded his culinary skills by working in a variety of renowned establishments across Argentina, Paraguay, Spain, and France. This diverse experience has honed his skills and given him a broad understanding of different cuisines and techniques.

For the past 14 years, Sebastian has been running his own intimate restaurant, La Truffle… y algo más, located in Aups, France. Here, he’s been able to fully express his passion for quality products, contemporary creativity, and a touch of Latin flair.

In his free time, Sebastian enjoys traveling and exploring different restaurants worldwide. These experiences allow him to continually learn and gather inspiration, ensuring he always brings something new to the table for our guests.
