Born in Asunción, Paraguay, Nadine speaks six languages and has lived globally. She was a finalist in Cyril Lignac’s culinary pastry competition “Les Rois du Gâteaux”, which kick-started her professional pastry training.

Nadine crafts seasonal desserts that blend creativity, elegance, and authenticity. Her high-end creations often feature local fruits, adding continuity to the menus she curates.

An architecture graduate and a member of both Escoffier Disciples and Toques Blanches Internationales, Nadine is married to Executive Chef Sebastian Gaillard. Together, they run the restaurant La Truffle… y algo más in Aups, France. There, they share their unique gastronomic vision infused with a touch of Latin flair.

Never settling into routine, Nadine continually offers her epicurean clientele new experiences, blending her origins, passion for cooking, and desire to share a unique flavor story.
