Nolan Reynolds International (NRI) and its experiential hospitality brand, the INMERSO Foundation, proudly presented Flavors Beyond Borders, a night of culinary excellence and philanthropy. Hosted on November 20, 2025, at the THesis Hotel Miami, the annual gala brought together industry leaders and gourmands to raise vital funds for the Flavors Beyond Borders Scholarship, supporting the next generation of talent at the Culinary Institute of America (CIA).

A Convergence of Culinary Talent

The evening showcased a stellar lineup of CIA-trained chefs representing both the vast CIA alumni network and NRI partner properties. Guests were treated to an al fresco, multi-course dinner featuring:

  • Albert Warnaar – Smyth Chicago
  • Mark Margiotta – Catskill Mountains
  • Keith Blauschild – The Cook & The Cork
  • Yoon Choi – Signia by Hilton
  • Victoria Androsz – Vici Design NYC
  • Jose Lopez – Casa Chameleon, Costa Rica
  • Christian Diaz – Mamey
  • Peiyuan Nung – The Collab

Menu Highlights

The culinary journey began with inventive amuse-bouches, including Chef Warnaar’s Brioche Toast with “Egg Sauce” and Chef Blauschild’s Chilled Tarragon Lobster Salad Taco.

The seated dinner featured exquisite entrées ranging from Butter Poached Halibut to Miso-Glazed Short Rib and Crispy Duck Confit. The experience concluded with artful desserts by Chefs Yoon Choi and Victoria Androsz, all perfectly paired with wines such as the 2004 Boizel Champagne Joyau de France.

Entertainment & Atmosphere

The gala was not only a feast for the palate but also for the ears. The evening featured live performances by two Grammy award-winning artists: jazz guitar virtuoso Fabrizio Sotti and the night’s headliner, Jamaican-American reggae fusion star Shaggy.

Designed by Monica Berincua of Top’s Events, the setting featured long imperial-style tables that fostered a communal tasting experience for over 200 guests. The décor embraced a sophisticated all-white aesthetic with gold accents, crystal glassware, and lush arrangements of hydrangeas and roses, illuminated by warm lighting woven through the surrounding trees.

The Celebration Continues

Following the dinner and auction, the night concluded with high energy at the Ivy Rooftop. The after-party featured dueling DJs, cigars, and signature cocktails, capping off a successful evening dedicated to the future of hospitality.
