Executive Chef, Thesis Hotel Miami
Pablo began his career at a fine dining Mexican restaurant in his native Colombia and went on to work around the world in Japan, Hawaii and Hong Kong. He then moved to Miami to work for renowned restaurants such as Nobu and Señora Martinez.
Having built a strong reputation, Pablo joined the team of Michelin starred Chef Jean Georges Vongerighten to successfully open The Edition Hotel Miami. Pablo has been recognized by Zagat for his work at No Name Chinese Restaurant in South Miami.
